Today on Yoshi (my Kawasaki Ninja 250R) I removed the snorkel from the airbox, supposedly allowing more air in. Tomorrow I will be installing a new slip-on exhaust, mostly for the noise, but it's also supposed to allow more air through. These together mean the bike is probably going to be running lean and I'm probably going to have to rejet the carburetors and raise the needles. That really does not sound fun at all. Luckily though there seems to be a lot of documentation from the hundreds of people that have done this before me on various forums. Fingers crossed.

Nah, re-jetting carbs isn't hard at all. Most likely you'll be able to find recommendations on jet sizes online. The tricky part with twins is synching the carbs but you shouldn't need that after a re-jet.
